Ingredients for Cauliflower Apple Pomegranate Salad

  • Cauliflower, 1, cut into florets
  • Olive oil, 2 Tablespoon
  • Paprika, 1 teaspoon
  • Cumin, 1 teaspoon
  • Apple, 1, chopped
  • Pomegranate seeds, 1 Cup
  • Arugula, 125 gram

Ingredients for Pomegranate Dressing

  • Low-carb pomegranate molasses, 2-3 Tablespoons
  • Olive oil, 4 Tablespoons
  • Red wine or apple cider vinegar, 1 Tablespoon
  • Sea salt, pinch
  • Black pepper, pinch

Instructions for Cauliflower Apple Pomegranate Salad

1.Cut cauliflower into florets. Preheat the oven to 350˚F or 177˚C and line a baking sheet with a parchment paper.

2.In a small bowl, mix olive oil, paprika and cumin. Coat cauliflower with the spice mix evenly. Spread cauliflower on the baking sheet and bake for 20 to 25 minutes until the edges start to brown. Take out of the oven and let it cool.

3.In a separate bowl, make a pomegranate dressing by mixing pomegranate molasses, olive oil, vinegar, salt and pepper. Adjust sweetness by adding pomegranate molasses if desired.

4.Take out pomegranate seeds. Cut an apple into bite sized chunks.

5.Assemble salad ingredients on a large plate by evenly spreading roasted cauliflower, arugula, apple, and pomegranate seeds. Serve with the pomegranate dressing.
