Ingredients for Coconut Flour Pound Cake

  • Coconut flour, 1 Cup
  • Low-carb sweetener, ⅓ Cup
  • Baking powder, 1 teaspoon
  • Eggs, 5 large, room temperature
  • Vanilla extract, 1 teaspoon
  • Greek yogurt, ½ Cup
  • Milk, ½ Cup
  • Avocado oil, 1 Tablespoon
  • Low-carb powdered sweetener for garnish

Instructions for Low-Carb Pound Cake

1.Preheat the oven to 177˚C (350˚F). Line a loaf pan with parchment paper.

2.In a large bowl, mix dry ingredients.

3.In a separate bowl, blend wet ingredients. 

4.Mix all ingredients together to make a cake batter.  Pour the batter into a loaf pan. 

5.Bake for 35-40 minutes or until edges turn golden brown and an inserted toothpick comes out clean.

6.Cool down completely before slicing the cake. 

7.Sprinkle powdered sweetener for garnish. Serve with your favorite icing if desired.
