
Inspired by Japanese cold noodle Hiyashi Chuka, this recipe uses ground sesame seeds and low-carb miracle noodles to increase nutritional density. Sesame seeds are a rich source of phytoestrogens that help balance estrogen and help relieve menopausal symptoms, protect our heart and bones, and reduce breast cancer risk.

Ingredients for Cold Sesame Noodle
- Ground sesame, 6 Tablespoon
- Tamari or gluten-free soy sauce, 6 Tablespoon
- Rice vinegar, 6 Tablespoon
- Low-carb sweetener (Stevia, Monkfruit, or Erythritol), 4 Tablespoon
- Sesame oil, 4 Tablespoon
Ingredients for Baked Chicken
- Chicken breast, 200 gram
- Olive oil, 1/4 cup
- Minced garlic, 1 teaspoon
- Sea salt, 1 teaspoon
Ingredients for Toppings
- Miracle noodles, 400 gram
- Tomato, 1 large
- Cucumber, 1
- Eggs, large, 2
- Sea salt, 1/4 teaspoon
Instructions for Cold Sesame Noodle
- Toast sesame seeds in a frying pan until sesame seeds turn light brown.
- Grind sesame seeds.
- Mix tamari or gluten-free soy sauce, rice vinegar, sweetener, and sesame oil. Add ground sesame seeds to the mix to make a sesame dressing. Set aside.
- Marinate chicken with olive oil, garlic, and sea salt. Bake the marinated chicken at 200˚C or 400˚F for 25 minutes.
- Beat eggs. Pan fry eggs on both sides. Salt to taste.
- Prepare toppings by chopping a tomato, slicing a cucumber, pan fried eggs, and chicken breast.
- Rinse miracle noodles (or noodle of choice) with running water for one minute. Boil the noodles for five minutes. Drain.
- Put noodles and toppings together. Sprinkle sesame dressing before serving.
