Inspired by Japanese cold noodle Hiyashi Chuka, this recipe uses ground sesame seeds and low-carb miracle noodles to increase nutritional density. Sesame seeds are a rich source of phytoestrogens that help balance estrogen and help relieve menopausal symptoms, protect our heart and bones, and reduce breast cancer risk.

Ingredients for Cold Sesame Noodle

  • Ground sesame, 6 Tablespoon
  • Tamari or gluten-free soy sauce, 6 Tablespoon
  • Rice vinegar, 6 Tablespoon
  • Low-carb sweetener (Stevia, Monkfruit, or Erythritol), 4 Tablespoon
  • Sesame oil, 4 Tablespoon

Ingredients for Baked Chicken

  • Chicken breast, 200 gram
  • Olive oil, 1/4 cup
  • Minced garlic, 1 teaspoon
  • Sea salt, 1 teaspoon

Ingredients for Toppings

  • Miracle noodles, 400 gram
  • Tomato, 1 large
  • Cucumber, 1
  • Eggs, large, 2
  • Sea salt, 1/4 teaspoon

Instructions for Cold Sesame Noodle

  1. Toast sesame seeds in a frying pan until sesame seeds turn light brown.
  2. Grind sesame seeds.
  3. Mix tamari or gluten-free soy sauce, rice vinegar, sweetener, and sesame oil. Add ground sesame seeds to the mix to make a sesame dressing. Set aside.
  4. Marinate chicken with olive oil, garlic, and sea salt. Bake the marinated chicken at 200˚C or 400˚F for 25 minutes.
  5. Beat eggs. Pan fry eggs on both sides. Salt to taste.
  6. Prepare toppings by chopping a tomato, slicing a cucumber, pan fried eggs, and chicken breast.
  7. Rinse miracle noodles (or noodle of choice) with running water for one minute. Boil the noodles for five minutes. Drain.
  8. Put noodles and toppings together. Sprinkle sesame dressing before serving.
