Low-carb, gluten-free cranberry orange biscuits are perfect for year-end holiday celebrations. Serve with a drizzle of sugar-free orange glaze over the biscuits.

Ingredients for Cranberry Orange Biscuits

  • Almond flour, 1 and ½ Cup
  • Coconut flour, ½ Cup
  • Baking powder, 1 and ½ teaspoon
  • Sea salt, ¼ teaspoon
  • Low-carb sweetener, ¼ Cup
  • Butter, 4 Tablespoon, room temperature
  • Eggs, 3 large
  • Sour cream, ½ Cup
  • Cranberries, fresh or frozen, 1 Cup
  • Zest of orange, 1 teaspoon

Orange Icing

  • Low-carb confectioners’ sweetener, ½ Cup
  • Fresh orange juice, 2 Tablespoon
  • Heavy cream, 2 Tablespoon
  • Zest of orange, 1 teaspoon

Instructions for Cranberry Orange Biscuits

1.Preheat the oven to 190˚C or 374˚F.

2.In a large bowl, mix together dry ingredients including almond flour, coconut flour, baking powder, and sea salt.

3.In a separate bowl, cream butter and sweetener. Add sour cream and eggs together and blend well.

4.Mix dry and wet ingredients together with cranberries to make batter. 

5.Pour the batter into the lined baking sheet using an ice cream scoop. Bake for 20 minutes until the edges are lightly browned and an inserted toothpick comes out clean.

6.Take out the biscuits and cool down. In a small bowl, mix the icing ingredients together. Drizzle the glaze over the biscuits before serving.
