A refreshing dessert for the spring, this low-carb, vegan strawberry mousse is super easy to make. Simply mix a strawberry puree with coconut cream, toasted walnuts, lemon zest, low-carb sweetener, and vanilla. Create a delicious treat for the Easter or other special celebration.

Ingredients for Low-Carb, Vegan Strawberry Mousse

  • Fresh strawberries, 1 Cup and more for topping
  • Zest of 1/2 lemon
  • Vanilla extract, 1/4 teaspoon
  • Low-carb sweetener, powdered, 1/4 Cup
  • Coconut cream, 2 Cups
  • Walnut, chopped, 1/4 Cup

Instructions for Low-Carb, Vegan Strawberry Mousse

1.Slice fresh strawberries. Mix berries, low-carb sweetener, zest of lemon, and vanilla extract in a blender until smooth. Set aside.

2.Toast chopped walnuts in a small pan. Set aside.

3.In a large bowl, beat coconut cream well until stiff peaks form.

4.Combine the strawberry puree mix with the whipped cream. Add the toasted walnuts and stir thoroughly. Refrigerate 2+hours or until firm.

5.Take out the mousse from the fridge and divide into 6 cups. Decorate with fresh strawberries on top.
