Ingredients for Matcha Cake

  • Blanched almond flour, 2 Cups
  • Matcha powder, 1 Tablespoon (add more if you like a strong matcha flavor)
  • Baking powder, 2 teaspoon
  • Low-carb sweetener, 1/4 Cup
  • Sea salt, 1/4 teaspoon
  • Coconut cream or whipping cream, 0.8 Cup
  • Avocado oil, 1/4 Cup
  • Eggs, large, 3
  • Vanilla extract, 1 teaspoon

Instructions for Matcha Cake

1.Sieve almond flour, matcha powder, and baking powder. Add sweetener and salt and mix well.

2.Preheat the oven to 170˚C (340˚F).

3.In a separate bowl, combine cream, oil, eggs, and vanilla extract. Whisk dry and wet ingredients together until well combined.

4.Pour the batter into a 6 inch baking pan. Bake for about 40 minutes or until the inserted toothpick comes out clean.

5.Take out the baking pan and let the cake rest until it completely cools.

6.Dust powdered sweetener and matcha powder before serving.
