Ingredients for One Pan Autumn Chicken

  • Chicken thighs, bone in skin on, 4 (about 600 gram)
  • Garlic, minced, 1 Tablespoon
  • Zest of one lemon
  • Juice of one lemon
  • Avocado oil, 2 Tablespoon
  • Parsley, chopped, 2 Tablespoon
  • Sea salt, 3/4 teaspoon
  • Butternut squash, chopped into 2 cm cubes, 3 Cups
  • Avocado oil, 1 teaspoon
  • Sea salt to taste
  • Apple, 1 chopped into 2 cm cubes
  • Low-carb brown sweetener, 1 Tablespoon (Optional)
  • Parsley for garnish

Instructions for One Pan Autumn Chicken

1.Prepare ingredients for chicken marinade by mixing garlic, zest of lemon, lemon juice, avocado oil, parsley, and sea salt in a bowl or a zip log bag. Add chicken thighs and set them aside while chopping butternut squash and apple.

2.Preheat the oven to 450˚F or 230˚C (210˚C fan).

3.Chop butternut squash into 2cm cubes. Toss the chopped butternut squash with a little bit of avocado oil and sea salt. Chop an apple into 2 cm cubes.

4. In a lined baking sheet, put chicken thighs skin side up. Arrange butternut squash around the chicken.

5.Bake the chicken and butternut squash in the oven for 30 minutes.

6.Take the pan out of the oven and add chopped apples. Sprinkle brown sweetener if you prefer more sweetness and bake for additional 10 minutes or until chicken is fully cooked and butternut squash is caramelised.

7.Sprinkle chopped parsley for garnish and serve warm.
