Ingredients for Orange Herb Roasted Chicken

  • Chicken legs and thighs, bone in skin on, about 2 Kg
  • Juice of one orange
  • Avocado oil, 4 Tablespoon
  • Garlic, minced, 1 Tablespoon
  • Low-carb sweetener, 1.5 Tablespoon
  • Oregano, 1 Tablespoon
  • Onion powder, 1 teaspoon
  • Paprika, 1/2 teaspoon
  • Red pepper flakes, 1/8 teaspoon
  • Sea salt, 1.5 teaspoon
  • Fresh thyme, chopped, 2 Tablespoon
  • Fresh rosemary, chopped, 2 Tablespoon
  • Onion, 1, thinly sliced
  • Orange, 1, thinly sliced
  • More fresh herbs for garnish

Instructions for Orange Herb Roasted Chicken

1.Take chicken out of packaging and trim excess fat.

2.In a large bowl, mix juice from one orange, avocado oil, minced garlic, and spices. Marinate the chicken in the mix.

3.Preheat the oven to 200˚C (400˚F). In a baking dish, spread out chicken skin side up and pour the remaining marinade. Add onion and orange slices. Sprinkle fresh chopped thyme and rosemary over the dish.

4.Bake for 1 hour until the orange slices look caramelised and chicken is cooked thoroughly.

5.Serve with more fresh herbs for garnish.
