Ingredients for Orange Herb Roasted Chicken
- Chicken legs and thighs, bone in skin on, about 2 Kg
- Juice of one orange
- Avocado oil, 4 Tablespoon
- Garlic, minced, 1 Tablespoon
- Low-carb sweetener, 1.5 Tablespoon
- Oregano, 1 Tablespoon
- Onion powder, 1 teaspoon
- Paprika, 1/2 teaspoon
- Red pepper flakes, 1/8 teaspoon
- Sea salt, 1.5 teaspoon
- Fresh thyme, chopped, 2 Tablespoon
- Fresh rosemary, chopped, 2 Tablespoon
- Onion, 1, thinly sliced
- Orange, 1, thinly sliced
- More fresh herbs for garnish
Instructions for Orange Herb Roasted Chicken
1.Take chicken out of packaging and trim excess fat.
2.In a large bowl, mix juice from one orange, avocado oil, minced garlic, and spices. Marinate the chicken in the mix.
3.Preheat the oven to 200˚C (400˚F). In a baking dish, spread out chicken skin side up and pour the remaining marinade. Add onion and orange slices. Sprinkle fresh chopped thyme and rosemary over the dish.
4.Bake for 1 hour until the orange slices look caramelised and chicken is cooked thoroughly.
5.Serve with more fresh herbs for garnish.
