1.First, prepare low-carb, gluten-free sweet chili sauce in advance if you are using a home-made sauce. See the recipe for sweet chili sauce here.

2.Peel and devein shrimps. Pat dry and set aside.

3.In a large bowl, mix sweet chili sauce, fresh lime juice, and tamari sauce. Leave a little bit of the mixture for reserve. Marinate shrimps for a couple of hours.

4.If using wooden skewers, soak in water for 30 minutes.

5.When ready to grill, heat grill to high. Thread shrimps onto skewers. For jumbo size shrimps, use 3 or 4 per skewer.

6.Oil the grill and grill shrimps until they turn pink, 3 minutes per side. Brush with reserved marinade. Grill until charred.

7.Serve with lime wedges and parsley or cilantro.
