Ingredients for Vegan Bean Tacos

  • Beans, 2 15 oz cans (red or black beans would work well)
  • Liquid from the can or water, 1/2 Cup
  • Olive or avocado oil, 2 Tablespoon
  • Cumin, 1 teaspoon
  • Garlic, minced, 1 teaspoon
  • Sea salt, 1/2 teaspoon
  • Soft tortillas, 4 large or 8 small
  • Avocado, 1, chopped
  • Juice of 1 lime
  • Lettuce, chopped, 1 Cup
  • Tomato, chopped 1 Cup
  • Vegan yogurt, 1 Cup
  • Parsley or cilantro, optional, for garnish

Instructions for Vegan Bean Tacos

1.Rinse and drain canned beans. Reserve 1/2 cup of the liquid from the can for later. Set aside.

2.In a large skillet, heat olive or avocado oil and add cumin, garlic, and sea salt. Stir until garlic becomes soft.

3.Add the beans and reserved liquid and cook until the beans get soft. Mash them using a fork if you prefer a soft texture.

4.Warm tortillas and prepare ingredients for the tacos. Sprinkle the juice of 1 lime over chopped avocado. Chop lettuce, tomato, and parsley (or cilantro).

5.Assemble all the ingredients on fresh tortillas and serve immediately.
